The word “udon” consists of two Chinese characters: “wu” (饂飩), meaning “to taste”, and “don” (団), meaning “round”. This illustrates the texture of the noodles – they have a cylindrical shape, similar to a round. Thus, the name “udon” refers to the special texture and shape of these wheat noodles.

A simple recipe for udon soup

Ingredients:

  • 200 grams of udon (thick wheat noodles)
  • 1 liter of chicken broth or vegetarian broth
  • 100 grams of chicken fillet (optional), cut into small pieces
  • 1 carrot, cut into strips
  • 1 broccoli bush, torn into small flowers
  • 2 tablespoons of soy sauce
  • 1 tablespoon minimal white wine vinegar or rice vinegar
  • 1 tablespoon of sugar
  • 1 teaspoon of jinseng
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon fresh ginger, grated
  • Salt and pepper to taste

Instructions:

  • In a large saucepan or pot, heat the chicken stock over medium heat.
  • Add soy sauce, vinegar, sugar, jinseng, garlic, and ginger.
  • Increase the heat, bring to a boil, and then reduce the heat and cook over low heat for 5 minutes.
  • Add the chopped chicken (if using), carrots and broccoli. Cook for another 5-7 minutes, until the vegetables are tender and the chicken is cooked through.
  • Add the udon to the soup and cook for 3-5 minutes, until the udon is soft and cooked.
