What is Funchose?
Funchoza, also known as glass noodles or transparent noodles, is a type of traditional Asian noodle made from krai starch. It has a transparent and elastic appearance reminiscent of glass, which explains its alternative name. Funchoza is widely used in Asian cuisine, especially in Chinese, Japanese and Vietnamese cuisine. This noodle is often added to soups, salads and fried dishes, as well as in a popular Thai dish – a salad with funchose and seafood. Funchoza has a neutral flavor and absorbs well the aromas and flavors of other ingredients with which it is combined.
What can you cook with glass noodles?
You can make a lot of delicious dishes with glass noodles (funchose). Here are some ideas:
Wok with shrimp and glass noodles: Pour hot water over the funchose.Let it steep for 5-7 minutes until it is soft. Then rinse under cold water. In a bowl, combine the soy sauce, rice vinegar, and honey. Heat the vegetable oil in a large skillet and add the chopped garlic and red chili pepper and sauté for about 1 minute. Add the shrimp to the pan and fry them, stirring, until fully cooked, about 3-4 minutes. Add the chopped carrots and red pepper to the pan and stir-fry for another 3-5 minutes, until the vegetables are soft but still crisp.
Add the cooked glass noodles and soy vinegar mixture to the pan. Stir to coat all the ingredients well with the sauce and continue cooking for another 2-3 minutes. Serve hot with fresh basil or cilantro on top.
Funchose with chicken and vegetables: Fry chicken pieces in a skillet with chopped vegetables (carrots, onions, broccoli, etc.). Add cooked and rinsed funchose and season with soy sauce, ginger and garlic.
Soup with сellophane noodles: Fry the chicken until golden brown. Season with salt and pepper to taste. Heat the oil in a saucepan and fry the onion and carrot over medium heat until soft. Add the sliced mushrooms and fry them together with the vegetables for another 2-3 minutes. Pour chicken or vegetable broth over the vegetables and mushrooms and bring to a boil. Add the glass noodles (funchoza) to the boiling broth and cook for 5-7 minutes until they are soft and transparent.
Return the fried chicken fillet to the soup and add soy sauce to add flavor.
Seafood funchose: Sauté shrimp, squid, mussels, and other seafood in a pan. Add cooked funchose and vegetables (paprika, onions, garlic), and then pour Thai or sweet chili sauce over everything.
Salad with funchose: Prepare a salad by adding funchose, fresh vegetables (carrots, cucumber, cabbage, tomatoes), cubes of stewed chicken or shrimp. Drizzle the salad with your favorite dressing or sauce.
Cellophane noodles with vegetables: Soak the glass noodles in hot water for 5-7 minutes. Then rinse with cold water. Heat olive oil and add red onion and garlic and fry for about 2-3 minutes. Add carrots, peppers and mushrooms. Stir-fry until the vegetables are soft, about 5-7 minutes. Add the noodles to the pan with the vegetables. Pour the soy sauce over the vegetables and noodles and stir. Serve hot and garnish with chopped green onions.
