What are Pad Thai noodles?

The name “Pad Thai” comes from the Thai word “Pad” (Thai: ผัด), which means “fried”, and “Thai” (Thai: ไทย) refers to Thailand, the origin of this dish. Thus, Pad Thai is translated as “Thai fried”. This dish, consisting of fried noodles with a variety of ingredients such as chicken, shrimp, eggs, sauces and vegetables, is one of the most popular and well-known Thai dishes both in the country and abroad

A simple recipe for Pad Thai noodles

Ingredients:

  • 200 g of rice noodles
  • 200 g of shrimp, peeled
  • 2 eggs
  • 2 tbsp. tablespoons of vegetable oil
  • 3 cloves of garlic, chopped
  • 1 red onion, chopped
  • 1 carrot, cut into thin strips
  • 1 red chili pepper, crushed (optional)
  • 50 g of soy sauce
  • 2 tbsp. tablespoons of tamarind sauce
  • 2 tbsp. tablespoons of sugar
  • 50 g of roasted peanuts, finely chopped
    1 lemon, cut into slices
  • Fresh herbs (cilantro, parsley), for serving

Instructions:

  • Soak the rice noodles in hot water for 5-7 minutes until they are soft, then drain in a colander and rinse with cold water
  • In a small bowl, mix the soy sauce, tamarind sauce and sugar until the sugar is completely dissolved.
  • Heat the vegetable oil in a large skillet or wok over medium heat. Add the garlic and sauté until golden brown.
  • Add the shrimp and fry for 2-3 minutes until they turn pink and are fully cooked. Then remove the shrimp from the pan and set aside.
  • At the same time, add the eggs to the frying pan and fry, stirring, until they are baked
  • Add the pickled vegetables (onions, carrots, chili peppers) and fry for 2-3 minutes.
  • Add the washed noodles and marinated sauce. Fry, stirring, for 3-4 minutes, until the noodles are soaked in the sauce and tender
  • Return the shrimp to the pan, add the finely chopped peanuts and stir.
  • Serve hot, garnished with fresh herbs and lemon slices.
